The Restaurant

The products used in our restaurant are 90% of Abruzzi origin.

Milk and its derivatives: mozzarella, ricotta and fresh cheese from the Grottelle Poggio Cinolfo agr. farm. Scamorze passite made from cow’s milk from the ‘Valentini’ Magliano dei Marsi dairy, distributed by the De Bonis brothers.

Tomato preserves of the ‘Pera d’Abruzzo’ variety grown and produced directly by us. All the non-sheep meat is supplied by the butcher’s shop Rotax di Guidi Maurizio, which has been selecting and choosing the best cuts for us since the day our premises were inaugurated, 13/12/1986. Our own rabbits, bred and butchered in Perero by the butcher’s shop ” I Sapori d’Abruzzo “.

Meat sausages prepared by the ‘Mario’ butcher’s shop in Carsoli .Prime chickens, reared and slaughtered in Valdevarri by Roberto Ferrari.L’Aquila saffron, used in various preparations. The chickpeas of Paganica, used to make a tasty soup with saffron from L’Aquila, salt cod and spelt from the Santoleri farm in Guardiagrele.The sour cherries, of our own production, with which we make succulent desserts and the famous ‘VISCIOLATA DI NONNO LANFRANCO’.

Ratafia and cooked must produced by the Praesidium farm. Gentian, a liqueur made from gentian roots from the Simbruini Mountains and white wines from Abruzzo az.agr. Zaccagnini, produced by Valerio Centofanti. Marigold liqueur, flowers picked in the woods near Tagliacozzo, produced by Valerio Centofanti together with our staff. Honey, pollen and royal jelly from our hives, cared for at Valdevarri by Roberto Ferrari. Mushrooms: Prugnoli, Porcini, Galletti (chanterelles), Ovuli collected and certified in the woods of the Carsolana maquis. Truffles: black summer, black precious, white truffle from Abruzzo.

Suppliers Orlandi truffles, Avezzano and Cesare Miconi from L’Aquila. Fruit and vegetables supplemented by Ortofrutta Franco Greco. From Colle di Tora, 30 km from Carsoli, in the province of Rieti, we get pea beans and ‘Lomeglio’, from the Luciano Loreti butcher’s shop. Flour from the Stoduto mill in Carsoli….

SOLINA, SENATORE CAPPELLI, SARAGOLLA, FARRO and GRANTURCO, with which we make homemade pasta and bread.The oils used in the kitchen and in the dining room are all exclusively from Abruzzo, such as az.agr. PERCONTI, az.agr. MASCIANTONIO and az.agr. ZAPPA.Wine cellar with over 164 Abruzzo labels.
